The ultimate comfort food, loved by kids and adults alike. Serve on its own, as a side to roast meat, or alongside a fresh salad. The Dijon mustard and cayenne add a subtle kick β adjust to taste or leave them out for picky eaters.

Cook the macaroni according to package instructions. Drain and toss with a little oil to prevent sticking.
Melt the butter and stir in the flour. Whisk in the milk and bring to a boil. Simmer the sauce for a few minutes.
Stir in two-thirds of the cheese in batches, mixing well between each addition. Season with mustard, salt, pepper, lemon juice, and cayenne.
Fold in the macaroni and transfer to a small ovenproof dish. Scatter the remaining cheese on top.
Place the dish in the center of the oven at 225Β°C (435Β°F) and bake for about 10 minutes, or until heated through and golden on top.
