Traditional Norwegian meat soup made from scratch with stewing lamb (or beef) and hearty root vegetables. This is comfort food at its finest — make a big pot and serve with flatbread or crusty bread. The broth improves overnight, so it is a great make-ahead meal.

Cut the meat into cubes. Bring the water to a boil and add the meat. Return to a boil, skim off any foam, and reduce the heat. Simmer until the meat is tender, about 1 hour.
Add the diced vegetables and stock cubes to the pot with the meat.
Simmer for about 15 minutes until the vegetables are tender. Season to taste with salt and pepper, and sprinkle with finely chopped fresh thyme before serving.
