The quintessential Neapolitan pizza with just tomato, mozzarella, and fresh basil. Adding the mozzarella and basil partway through baking prevents them from burning while the crust crisps up. Use the best buffalo mozzarella you can find for a noticeable difference.

Preheat the oven to 220°C (425°F). Line a baking sheet with parchment paper.
Roll out the dough on a floured surface and press it onto the baking sheet so it fills the entire pan. Spread the tomatoes evenly over the dough and drizzle with olive oil.
Bake the pizza for 15-20 minutes. Remove and top with mozzarella slices and basil. Season with salt and pepper, and drizzle with olive oil.
Bake for an additional 7-8 minutes until crisp and golden.
