A quick pan-seared pork chop dish with caramelized apple and onion in a cider pan sauce. The apple cider reduces into a glossy glaze that ties everything together. Pairs beautifully with mashed potatoes or crusty bread to soak up the sauce.

Season the pork chops all over with smoked paprika, salt, and pepper.
Heat olive oil in a large skillet over medium heat. Add the pork chops and cook, flipping halfway, until golden, about 3 minutes per side. Transfer to a plate.
In the same pan, add the apple, onion, and garlic. Cook until browned and slightly softened, about 8 minutes.
Add the rosemary, thyme, and apple cider. Bring to a simmer.
Return the pork chops to the pan and simmer until the cider is nearly fully reduced and a thermometer inserted in the thickest part reads 63°C (145°F), about 6 to 8 minutes more.
