A classic family-style lasagne layered with a simple meat and tomato ragu, creamy cheese sauce, and plenty of melted cheese on top. This is a great make-ahead dish that reheats well the next day. Serve with a crisp green salad.

Brown the ground beef in rapeseed oil for about 3 minutes. Add the onion, carrots, and garlic and cook for another 3 minutes.
Add the canned tomatoes and simmer for 5 minutes. Season with salt and pepper.
Make the cheese sauce: Melt the butter in a saucepan. Add the flour and cook, stirring constantly, for about 3 minutes.
Gradually whisk in the milk and cook, stirring, for about 10 minutes until it begins to thicken. Cook longer for a thicker sauce. Stir in the grated cheese and season with salt and pepper.
Layer the meat sauce, lasagne sheets, and cheese sauce in an ovenproof dish, repeating until all are used. Top with grated cheese.
Bake in the oven at 180°C (350°F) for about 45-60 minutes until golden and bubbling.
